  • With the summer fast approaching and endless days ahead of hot, stuffy weather we tend to eat lots of things we can whip up without cooking as it saves extra heat in our home and it is just what we craves, but though I have many raw cookbooks they often lead to being quite complex and certainly not what I want to start preparing at the end of the work day!

    So I like this book for the wide variety of recipes it contains - some are simple, some will require like many raw cookbooks, a dehydrator so will be a longer process but you have the freedom to choose which you want to go with and some require soaking of nuts but that can be done overnight to whip up a recipe the next day .

    This book gets points for the fact that there are not a bunch of superfluous pages telling you why the author went raw, what to stock your pantry with and what equipment you need so my assumption is that this is designed for someone that has those books or knowledge already. It goes straight into the recipes and for that reason there are a lot of choices. Chapters are Breakfast, Classic entrees; Lightly cooked vegan entrees - this is important to note as the book is not 100% raw so please know prior to making a purchase; Getting your Greens (salads, soups and appetizers); River of Life (juices / smoothies) and finally raw desserts!

    Breakfast includes some lovely parfaits, energy giving smoothies and chia puddings; the next chapter includes my weekend dinner - zucchini lasagna with cashew ricotta , wraps for my kids to take to school, curries, tacos and many takes on pasta dishes. The cucumber spring rolls look insanely beautiful and are quick to assemble - I just have to see how close mine come to the beauties in the picture,; and the salads will be my summer go to. Smoothies include healthy green juices, aloe margaritas, aqua fresca but the chocolate junkie in me knows the chunky monkey smoothie will be made the most. Finally there are some stunning looking desserts but as I have yet to make any vegan dessert that looks or tastes good beyond freezer fudge, this will be the challenge for me!

    The book has clear step by step instructions, recipes are guided by beautiful photos and of most relevance, of all the raw cookbooks I own, this one requires the most simple ingredients which is always a benefit! Some dishes will require a dehydrator or blender but many do not! But this makes raw food more accessible for most.
